On The Right Track

When asked the question why? Meaning why are we baking cookies that are vegan, that have no gluten, or refined sugars and flour.

My answer is simple.

We live in a place where we don’t have to worry where our next meal is coming from, where we are free to make choices and decisions on how we want to live our lives everyday. We can chose to eat however we want. Why not chose the one that is better for you. Why not chose the healthier way of life.

The fact is I have been exercising for the last three years consistently and I don’t want to throw away all my progress every time I crave something sweet.  I want the food I eat to work with me, not against me and to be honest I've lost five pounds sense we started this whole baking thing. 

I have the power to make the right choices for my body and thats exactly what I'm doing!!!

My choices create who I am. And the foods I eat help me to better become the person I want to be. If I fuel myself with life then life will radiate out of me, but if I feed myself processed, dead foods then I slowly start to lose that light, airy, energetic feeling I have whenever I feed my body what it needs.


Feed yourself junk and feel like junk!

OR

Feed yourself well and feel well!  

The point is food should never make you feel bad, like your doing something wrong. The food you eat should fuel you, making you stronger and making you feel better. All you have to do is chose the foods that can do that. 

Conscious cookies gives you that sweet yummy cookie without feeling like you just ate 100 pounds of lard. We use things like almond meal, and coconut sugar. We are doing our research to make the best ANYTIME COOKIE out there. 

Eat Well And Be Well!!!!!
We are a truly lucky to live where we have the opportunity to eat what we want to eat.

RIGHT TRAIN, WRONG TRACK


Well, as with many self starters we
were ambitious.... (still are)
but between our social life, school and work our once thriving cookie brains started rotting.. BLEH!
For what world does thou strive to flourish in and not face a challenge,  if thou dost believe in thyself then surely thou can see the prize for which thou is fighting for.  

I refuse to say that this was "harder than we thought" because I knew it was a road less traveled. I knew it was going to be a bit challenging, but that's all it is A CHALLENGE



A fight:: every turn, every bump and spin, dip and spill is a punch, and each blow we give gets us closer to knocking down all those barriers that we are standing behind, those barriers that are walling in our dream. But we're breaking free, busting out!

The last few bake dates we had more or less turned into bake duds.. Our cookies were coming out delicious right out of the oven, but unfortunately after a few days out in the world they turned into teeth breakers, not to mention   the greasy film left in our mouth from the coconut oil and crystalized maple syrup caked molars our cookies left in their path.



BUT ALAS!! We are determined! The originator tasted good and we used good ingredients, but baking is a science and the first cookie success and ultimate downfall only got the blood flowing in our ambitious spirits! 
"Forge onward" 
our inner voice yelled!


And so we do! Tomorrow we bake with an entirely new recipe and hopefully the making of vegan butter! I am definitely looking forward to that!! Some of our new ingredients we will be working with are gaur gum, homemade tapioca and rice flour as well as date and coconut sugar!
  
We sat down and had a break through. Codi and I racked our brains and dug deep in our thought caverns and pulled out the genius that had been lurking underneath the daily crap we deal with. We knew it was there, we just needed to sit and meditate and that IS something I will admit to not doing!

We did not meditate. It was so important that we sit down and gather our thoughts and pace ourselves, so we can get to our goal with one foot in front of the other.

This journey is just as important to us as the destination.

Our cookies are on the way...

Week Two- Day Two of Baking: The First Defeat


Still high from last weeks baking we jumped head first into baking 3 different batches of cookies.

WOOHOO!!!!

Step one: Repeat our original recipe, The Sugar cookie. This time instead of using coconut oil and almond flour we decided to try coco butter and coconut flour… Lets just say this recipe wasn’t quite what we were expecting.

Step two: Tackle two new recipes, a banana coconut, and a pumpkin spice.

In my opinion the banana coconut recipe tasted the best, however it couldn't hold up to the pressures of gravity.

It crumbled and fell apart like a vampire being left out to feel the suns rays pierce its skin. It was truly a tragedy.

The pumpkin spice recipe; we had such high hopes for these cookies. We imagined them coming out perfect, triumphant and delicious. However they had a different plan for their future. They decided that cooking just wasn't for them. They would rather fall apart and stay exactly how they were. They weren't going to change for anyone. All I have to say is, no matter how much cinnamon, nutmeg or clove you add, nothing will penetrate the flavor of coco butter. 

It seemed like nothing was going right. First they didn’t taste right, then they were too dry and then they didn’t want to bake. 

A cookie, oven protest!


Yesterday was a day for learning, experimenting, and becoming mad scientists on the verge of a break through. We learned never to bake with coco butter. It’s great for the skin, but not so great for the palate. Even though it smells beautiful, it dominates every taste bud with its presents.

I think apart of us felt like we had this in the bag, especially since our first cookie turned out so great. I think we thought that baking gluten free, vegan, no refined sugar and no refined flour cookies would be easy (well easy-ish). But we were reminded, that we still have so much to learn. We learned that each cookie recipe has its own chemistry with binders, sugars, and flours. All we have to do is find them their match and hook them up. Find them partners that have what they need to be happy cookies.
 

I guess our cookies yesterday just don’t want to stick together as well as Julie and I do.

Day one... THE DAWN OF A NEW COOKIE

Gluten-free, refined flour free, refined sugar free, vegan "sugar"cookie!!

Today was the day.. ... .. ..

THE DAY OF BAKING..
The masterfulness of two genius minds on a Saturday
 afternoon between jobs

We constructed our first glorious piece of edible cookie art!

Using our hard working imaginations and we put together a sugar cookie without butter, refined sugar, eggs and flour.

Many of you may be saying to yourselves...

"WHAT THE HECK!"




Is that even possible..... ?


You bet your Uncle Bob its possibile and one of the best parts, its edible without even baking it!! So you spoon lickin' bowl scrappers can save some water and use your tongue. 


Imagine a cookie that can be shared with the pickiest of friends, a cookie that’s safe for children and doesn’t send them sky high on a sugar rush. A cookie you can eat for breakfast with coffee or for desert with tea.

AN ANY TIME COOKIE!

I bet your saying to yourselves… “THAT’S GREAT! But how did you do it? What did you use instead?”

DID YOU KNOW?...

FLAXSEED when cooked with water creates a gooey, egg like consistency and is used as a binder. It takes the place of eggs and its GOOD FOR YOU!!!

ALMONDS not only do they taste great but they also make beautiful flour when soaked, dehydrated and ground.

MAPLE SYRUP a great substitutes for refined, bleached, nasty, not good for you, supermarket sugars. Oh and it tastes delicious!

COCONUT OIL a healthy, flavorful and perfect mate to any recipe calling for cow’s butter.

We may not have all the answers yet, but with a little imagination, passion and a want for something better I believe we can do anything we put our minds and efforts to. Right now its cookies, next it'll be the WORLD! :)

Week one.. "The Beginning"


The dream started long ago, but It all came to light one afternoon in the kitchen of Codi's older brother.

We didn't know where to start or how we were going get there, but we knew had to begin.

We sat there talking about our future and what we were accomplishing in our lives. We both were speechless, stunned at each others lack of inspiration. We needed to scare ourselves. We had to start something and finish it and most importantly LOVE IT!

A COOKIE BUSINESS
DUH!

We had both been cooking our whole lives, it was passed down in our families and it became a way to connect with our friends, it is our passion.

The world changed every year and with it our choices. We explored health through exercise which opened the door to our eating habits. We were no longer satisfied by the food we were eating. It wasn't nourishing our bodies, our minds or our spirits. We did NOT feel good.

We loved to eat and go out, but we noticed how limited our choices were to indulge our cravings or to even celebrate and not feel guilt for days after. So we decided we were going to be the ones to change that. And what a better place to start than with a cookie.

Our goal is to become a household name and not a healthy $5 cookie. We want to start by showing our community and ultimately the world that eating right doesn't mean having to sacrifice flavor, our bodies or the planet. We hope to inspire others to do the same and find positive outlets of expression, wether through music, art, food, or anything that makes your spirit shine.

We want to share our experiences and we want you to be able to share yours, wherever life leads you. Ours just so happens to be lead with gluten-free, eco friendly vegan cookies...

Lets begin with giving back to ourselves so we can give back to others.

And thats the way OUR cookie crumbles..
